Recipe to Try


Here's a recipe for "Eggplant Parmesan Meatballs (Vegetarian)" that should be easy for any busy person to follow: Ingredients:

1.5 lbs. eggplant, cut into small pieces

6 tbsp olive oil, divided

1/2 tsp salt

1 cup seasoned breadcrumbs (or plain breadcrumbs mixed with 1 tsp Italian seasoning)

1/3 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 egg + 1 egg yolk

3 cloves of garlic, minced

1/2 tsp black pepper

1/2 tsp onion powder

24 oz marinara sauce

1/2 cup whole milk ricotta cheese (or dairy-free alternative)

crusty bread for serving Instructions:


Preheat your oven to 375°F. Place the eggplant in a baking dish, toss with 3 tbsp of oil and salt. Bake for 30 minutes, flipping halfway. Then transfer it to the fridge and let it cool for 20 minutes.


In a food processor, pulse the cooled eggplant about 10-12 times, or until it's finely chopped. Transfer it to a large bowl.


Add the breadcrumbs, Parmesan, parsley, eggs, garlic, pepper, and onion powder. Mix everything together with your hands. Form the mixture into 20 small meatballs (about 2 tbsp each).


Heat the remaining 3 tbsp of oil in a skillet over medium heat. Add half of the meatballs, cook for 6-7 minutes, turning until they're browned. Repeat with the second batch.


Spread the marinara sauce in the same baking pan you roasted the eggplant in. Add the meatballs, and scatter small dollops of ricotta cheese throughout. Bake for 15 minutes, until the sauce is bubbly. Garnish with extra parsley and Parmesan if desired. Serve with crusty bread. Enjoy your eggplant parmesan meatballs!
