Recipe to Try

Portuguese Bean Soup

Ingredients:

  • 6-8 smoked ham hocks

  • 4 potatoes, diced

  • 1 package celery, diced

  • 1 package carrots, diced

  • 1 can (15 oz) tomato sauce

  • 1 can (14.5 oz) diced tomatoes

  • 3-4 bay leaves

  • 1/4 head cabbage, sliced

  • 1/2 cup macaroni

  • 1 Portuguese sausage, cut to size

  • 1 can (15 oz) kidney beans, drained and rinsed

  • Salt and pepper, to taste

Instructions:

  1. Place the smoked ham hocks in a pressure cooker and add enough water to cover them completely. Secure the lid and bring the pressure cooker up to high pressure.

  2. Cook the ham hocks on high pressure for 40 minutes. Once the cooking time is up, carefully release the pressure according to the manufacturer's instructions.

  3. Remove the ham hocks from the pressure cooker and let them cool for a few minutes. Once cooled, shred the meat and discard the bones.

  4. Pour the liquid from the pressure cooker (the ham hock stock) into a large pot. Add the shredded meat to the pot as well.

  5. Add the diced potatoes, celery, carrots, tomato sauce, diced tomatoes, and bay leaves to the pot. Stir everything to combine.

  6. Bring the pot to a boil, then reduce the heat to a simmer. Cook for about 10 minutes, or until the vegetables are starting to soften.

  7. Add the sliced cabbage, macaroni, Portuguese sausage, and kidney beans to the pot. Stir everything to combine.

  8. Continue to simmer the soup until the vegetables are soft and the macaroni is cooked through, about 10-15 minutes.

  9. Taste the soup and add salt and pepper to your preference. Remove the bay leaves before serving. Enjoy your delicious Portuguese Bean Soup!
