Recipe to Try
Here's the recipe for "The Best Lentil Soup" from Food Network:
Ingredients:
2 tablespoons olive oil
2 medium carrots, chopped
1 medium onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 1/2 cups brown or green lentils, picked over and rinsed
6 to 8 cups chicken or vegetable broth
2 bay leaves
1 teaspoon dried thyme
Salt and pepper
Instructions:
Heat the oil in a large saucepan over medium heat.
Add the carrots, onion and garlic and cook until the vegetables are soft, about 5 minutes.
Stir in the tomato paste and cook for 1 minute.
Add the lentils, broth, bay leaves, thyme, salt and pepper. Bring to a boil.
Reduce the heat and simmer, covered, until the lentils are tender, 30 to 40 minutes.
Season to taste with salt and pepper. Serve hot.
